How awesome is winter with all the lovely warm food and hot teas we get to enjoy!!! This soup is so delicious and full of nutrients!
1 cup of chickpeas (uncooked or tinned)
1 cup of kidneys beans (uncooked or tinned)
1 cup of butter beans or any others that you enjoy ( i love the black eye or borlotti beans) (uncooked or tinned)
1 cup of barley
1 onion finely chopped
2 celery stalks finely chopped
1 clove of garlic finely diced
2 carrots finely chopped
1 tin of diced tomatoes
Tub of cherry tomatoes
1 litre of vegetable stock
1 tbsp of olive oil
Salt & pepper to taste
Finely chopped fresh basil and parsley to serve
Method: Step 1: Heat olive oil in a soup pan and add onions and garlic and cook until mostly cooked through. Step 2: Add celery and carrots and partially cook. Step 3: Add all beans, chickpeas, barley, cherry tomatoes and tin tomatoes and stir through well. Step 4: Add vegetable stock and bring to the boil, once boiling turn temperature down and allow to cook for 25 - 30 minutes or until the beans and barley are cooked through. Step 5: Serve into bowls and sprinkle chopped herbs over soup and salt and pepper to taste!
